Protein Day Meal Prep: Shredded Chicken

If you’re looking for an easy recipe for meal prep for your Protein Days, we have you covered. This recipe for shredded chicken is packed with protein and makes enough servings to last you for a few meals. Check out the video and the recipe below!
Slow-Cooker Shredded Chicken
- 2 lb. chicken breast
- 2 cups vegetable broth
- ½ lemon, juiced
- 1 tsp dried thyme
- ½ tsp salt
- 2-3 cups water (enough to fully cover the chicken)
- Place all ingredients in a slow-cooker. Cook on low for 4-5 hours.
- Use a mixer for easy shredding.
- Enjoy by itself, in salads, in wraps, or any other way you’d like!
